Baking Hamantaschen

My favorite thing about Holidays is all the wonderful FOOD! Hamantashen anyone? Yesterday, our preschool children made some of their own.

Here's the recipe.

Dough:

  • 3/4 cup light brown sugar
  • 1 cup softened margarine (2 sticks)
  • 1/2 cup corn oil      *3 ½  cups flour
  • 2 eggs  
  • 1 teaspoon baking powder

Filling:

  • Use your favorite ingredient: Prune butter, poppy seed pie filling, apricot jam, strawberry jam, chocolate chips, nutella, peanut butter cups, etc.  Be Creative!!

Preheat Oven to 350 degrees.

Mix all the dry ingredients in a large mixing bowl.  Add eggs, oil and margarine.  Mix until everything is blended- Best mixed with your hands.

Refrigerate dough for at least ½ hour.

Flatten out the dough using a rolling pin or your hand.  Cut a round piece using the bottom of a cup.  Fill the center of the circle with a teaspoon of filling.  Draw the 3 sides together to form a triangle and PINCH the edges.

Place the cookies on an ungreased cookie sheet and bake for 20 minutes or until golden brown.
